  • 1 cup Hummus Use store-bought or homemade.
For the Topping
  • 2 tablespoons Sunflower seeds Can be replaced with hemp seeds or omitted.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 170°C fan/190°C/375°F.
  2. In a mixing bowl, combine minced garlic, balsamic vinegar, and olive oil.
  3. Place cherry tomatoes in an ovenproof dish and drizzle with balsamic mixture, then season with salt and pepper.
  4. Roast the tomatoes in the preheated oven for 20 minutes.
  5. Toast your sourdough bread until it reaches your desired level of crispness.
  6. Spread a layer of hummus over each slice of toasted bread.
  7. Spoon the blistered balsamic roasted tomatoes onto the hummus-covered toast.
  8. Sprinkle sunflower seeds on top and add a dash of black pepper.
