  • 1 tsp Baking Powder
  • 1 pinch Salt Balances sweetness.
  • 1 cup Fresh or Frozen Blueberries Do not thaw frozen blueberries.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 24-cup mini muffin pan.
  2. In a blender, combine cottage cheese, rolled oats, egg, honey or maple syrup, vanilla, lemon zest, baking powder, and salt. Blend until smooth, leaving some oats partially broken.
  3. Transfer the batter to a mixing bowl and gently fold in blueberries.
  4. Let the batter rest for about 5 minutes.
  5. Fill muffin cups about 3/4 full with the batter.
  6. Bake for 18 to 22 minutes until lightly golden and springy.
  7. Cool in the muffin pan for 5 minutes, then transfer to a wire rack to cool completely.
