- Preheat your oven to 300°F (150°C) and grease each compartment of a silicone muffin tray.
- Blend together the eggs, cottage cheese, half of the cheddar cheese, salt, and black pepper until smooth.
- Pour the blended egg mixture into each muffin compartment, filling them halfway.
- Chop the broccoli and spinach, then distribute them over the egg mixture. Top with remaining cheddar cheese.
- Season with extra salt and pepper if desired, then bake in the preheated oven for about 30 minutes.
- Allow to cool for 5 minutes, then gently remove from the tray.
- Enjoy warm, or store in the fridge or freezer for later.
