Preparation Steps
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a medium skillet, heat 1 tablespoon of extra virgin olive oil over medium heat. Add the thinly sliced yellow onions and sauté for about 15-20 minutes until golden brown.
- In another skillet, heat the remaining olive oil over medium heat. Add the cubed butternut squash and sauté for 10-15 minutes until tender.
- In a mixing bowl, combine the caramelized onions, cooked butternut squash, fresh thyme, salt, and pepper.
- Roll out the thawed puff pastry on the prepared baking sheet, leaving a 1-inch border. Spread the filling mixture evenly and sprinkle the goat cheese on top.
- Bake for 25-30 minutes until the pastry is golden brown and the filling is set.
