Preparation Steps
- Caramelize the Peaches: Heat a skillet over medium heat. Add 1 tablespoon of unsalted butter, then add sliced peaches, brown sugar, and cinnamon. Cook for 3-4 minutes on each side until caramelized.
- Prepare the Bread: Slice sourdough or ciabatta bread into thick pieces. Spread butter on one side of each slice and drizzle olive oil on the opposite side.
- Assemble the Sandwiches: Place a slice of bread butter side down, layer Brie cheese and caramelized peaches, drizzle honey and add fresh basil if desired, then top with another slice of bread, oiled side up.
- Grill the Sandwiches: Heat the skillet again, grill sandwiches for 3-4 minutes on each side until golden brown and Brie is melted.
- Serve and Enjoy: Remove from skillet, let cool for a minute, slice in half, and serve warm.
