Preparation Steps
  1. Caramelize the Peaches: Heat a skillet over medium heat. Add 1 tablespoon of unsalted butter, then add sliced peaches, brown sugar, and cinnamon. Cook for 3-4 minutes on each side until caramelized.
  2. Prepare the Bread: Slice sourdough or ciabatta bread into thick pieces. Spread butter on one side of each slice and drizzle olive oil on the opposite side.
  3. Assemble the Sandwiches: Place a slice of bread butter side down, layer Brie cheese and caramelized peaches, drizzle honey and add fresh basil if desired, then top with another slice of bread, oiled side up.
  4. Grill the Sandwiches: Heat the skillet again, grill sandwiches for 3-4 minutes on each side until golden brown and Brie is melted.
  5. Serve and Enjoy: Remove from skillet, let cool for a minute, slice in half, and serve warm.
