- Preheat the oven to 350°F (175°C) and spray a 9x13-inch baking dish with cooking spray.
- Cook the jumbo pasta shells in salted water until al dente, about 8-10 minutes. Drain and set aside.
- In a skillet, heat olive oil and sauté onion and garlic for about 3 minutes.
- Brown the ground beef, then add the pasta sauce and let simmer.
- In a bowl, mix egg, ricotta, 1 cup mozzarella, parmesan, and parsley until smooth.
- Spread 1/3 of the meat sauce in the baking dish and stuff each shell with the cheese mixture, placing them seam-side up.
- Pour remaining meat sauce over the shells, then cover with foil.
- Bake for 30 minutes, remove foil, add remaining mozzarella, and bake for an additional 5-10 minutes.
- Let sit for a few minutes before serving. Enjoy!
