  • 1 medium Onion chopped; shallots can be used
  • 2 cloves Garlic minced; fresh is best
  • 4 cups Potatoes diced; sweet potatoes can be used
  • 1 tsp Salt sea salt or kosher salt
  • 0.5 tsp Black Pepper or cayenne for heat
  • 1 tsp Paprika or chili powder
  • 1 tsp Dried Oregano or fresh oregano
  • 1-2 cups Cheddar Cheese shredded; mozzarella can be an alternative
  • 1 cup Beef Broth or vegetable broth
  • 0.25 cup Fresh Parsley chopped for garnish

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat for 1-2 minutes.
  2. Add 1 pound of ground beef, breaking it up with a wooden spoon, and cook for 5-7 minutes until browned.
  3. Incorporate 1 chopped onion and 2 minced garlic cloves, sauté for 3-4 minutes until the onion is translucent.
  4. Stir in 4 cups of diced potatoes, seasoning with 1 teaspoon of salt, 0.5 teaspoon of black pepper, 1 teaspoon of paprika, and 1 teaspoon of dried oregano. Cook for another 2 minutes.
  5. Pour in 1 cup of beef broth, cover, reduce heat to low, and simmer for 20-25 minutes until potatoes are tender.
  6. Remove lid and sprinkle 1-2 cups of shredded cheddar cheese evenly, cover and cook for an additional 2-3 minutes until melted.
  7. Garnish with freshly chopped parsley and serve warm.
