  • 1 can Chickpeas rinsed and drained
  • 1 large Avocado ripe, diced
  • 4 oz Feta Cheese crumbled
  • 1/2 medium Red Onion sliced thinly
  • 1/4 cup Fresh Parsley chopped
  • 1/4 cup Fresh Mint chopped
For the Dressing
  • 3 tbsp Olive Oil extra virgin preferred
  • 2 tbsp Lemon Juice freshly squeezed
  • 1 clove Garlic minced
  • 1 tsp Dried Oregano
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Rinse and drain chickpeas, placing them in a large mixing bowl.
  2. Dice the avocado, adding it to the bowl with lemon juice.

  4. Add crumbled feta to the mixture and gently fold to combine.
  5. In a separate bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  6. Pour dressing over the salad and gently toss to coat.
  7. Serve fresh or chill for 10-15 minutes before enjoying.
