Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a mini muffin pan.
  2. In a mixing bowl, combine cottage cheese, rolled oats, applesauce or grated apple, egg, cinnamon, sweetener, baking powder, and salt.
  3. Let the batter rest for about 5 minutes.
  4. Scoop the batter into the prepared muffin pan, filling each cup almost to the top.
  5. Bake for 18-20 minutes until golden.
  6. Allow to cool in the pan briefly, then transfer to a wire rack to cool completely.
  7. Enjoy warm or store in an airtight container in the fridge for up to 4 days.
