  • 1.5 cups Shredded Cheddar Cheese Mix half in and save half for topping.
  • 4 pieces Boneless, Skinless Chicken Breasts or Thighs Thighs recommended for juiciness.
  • to taste Salt Essential for seasoning.
  • to taste Black Pepper Essential for seasoning.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  2. In a large mixing bowl, combine the uncooked long grain white rice, cream of chicken or mushroom soup, water, milk, and the onion soup mix.
  3. Pour the rice mixture into your prepared baking dish and sprinkle half of the shredded cheddar cheese on top.
  4. Nestle the boneless, skinless chicken into the rice mixture.
  5. Cover the baking dish tightly with aluminum foil and bake for 1.5 to 2 hours.
  6. Remove the foil and sprinkle the remaining cheddar cheese over the casserole, then bake uncovered for an additional 15-20 minutes.
  7. Let the casserole rest for 15-20 minutes before serving.
