- Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
- Roll out the puff pastry on a lightly floured surface and transfer to the baking sheet, leaving some edge space.
- Cook diced pancetta in a medium skillet over medium heat until crispy, about 3-5 minutes. Transfer to paper towels to drain the excess grease.
- Spread cranberry sauce across the center of the puff pastry, leaving a 1-2 inch border. Layer Brie slices on top, followed by the crispy pancetta.
- Fold the edges of the puff pastry over the filling, pinching to secure, and brush the exposed edges with the beaten egg.
