Ingredients

For the Tart
  • 1 package Puff Pastry Can substitute with other pastry doughs, but expect a different texture.
  • 8 ounces Brie Cheese Feel free to replace with Camembert for a bolder taste.
  • 1 cup Cranberry Sauce Fig or apricot preserves work well for a unique twist.
  • 4 ounces Pancetta Omit for a vegetarian option or swap in toasted walnuts or pecans.
  • 2 tablespoons Fresh Thyme Dried thyme is fine, though fresh is recommended.
  • 1 large Beaten Egg No substitutes needed for a glossy finish.

Equipment

  • oven
  • medium skillet
  • baking sheet
  • Parchment Paper
  • Rolling Pin

Method

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. Roll out the puff pastry on a lightly floured surface and transfer to the baking sheet, leaving some edge space.
  3. Cook diced pancetta in a medium skillet over medium heat until crispy, about 3-5 minutes. Transfer to paper towels to drain the excess grease.
  4. Spread cranberry sauce across the center of the puff pastry, leaving a 1-2 inch border. Layer Brie slices on top, followed by the crispy pancetta.
  5. Fold the edges of the puff pastry over the filling, pinching to secure, and brush the exposed edges with the beaten egg.
  6. Bake for 20-25 minutes until the pastry is golden brown and the cheese is melted.
  7. Allow to cool slightly and garnish with fresh thyme leaves before serving.
