  1. Start by steaming your 8 cups of broccoli florets until they are crisp-tender for about 5 minutes. Set aside.
  2. Preheat your oven to 425°F (220°C) and lightly grease an 11x7-inch baking pan.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Sauté the leeks and shallots for 8-10 minutes until soft. Add garlic and sauté for another minute.
  4. Pour in the dry white wine and let it cook down for several minutes. Sprinkle with flour and stir for 1-2 minutes. Gradually whisk in the milk until the sauce thickens, about 4-5 minutes. Season with salt and pepper.
