- Preheat your oven to 350°F (175°C) and grease your baking dish with butter.
- Slice the potatoes into thin 1/8-inch rounds using a mandoline and keep them in cold water.
- Melt butter in a skillet, sauté onion until translucent, then add minced garlic and thyme.
- Sprinkle flour over the mixture, whisk for 1-2 minutes, then slowly add milk until thickened.
- Remove from heat, stir in cheese, nutmeg, salt, and pepper until melted.
- Layer half of the potatoes in the baking dish, cover with half of the cheese sauce.
- Repeat with the remaining potatoes and cheese sauce, topping with extra Gruyère.
