Step-by-Step Instructions for Creamy Gochujang Udon Noodles
  1. Cook the udon noodles according to package instructions, reserve ½ cup of the noodle water, then drain and rinse under cold water.
  2. In a large skillet, melt the butter over medium heat, add garlic and shallots, and sauté for 2-3 minutes.
  3. Add gochujang, allowing it to cook for 30 seconds, then gradually stir in heavy cream and reserved noodle water.
  4. Add soy sauce and gochugaru, then simmer for 3-5 minutes until the sauce thickens.
  5. Combine cooked noodles with sauce in skillet and toss for 1-2 minutes until well coated.
  6. Serve garnished with Parmesan, green onions, and an egg yolk.
