  1. Brine the tofu: Combine 2 cups of hot water, 2 teaspoons of kosher salt, 3 smashed garlic cloves, 1 teaspoon of dried oregano, and a pinch of crushed red pepper flakes. Cut the tofu into cubes and soak for at least 15 minutes.
  2. Prepare tofu for frying: Remove and pat dry. Mix 3 tablespoons of cornstarch, 1 teaspoon of onion powder, and 1 teaspoon of smoked paprika. Toss the dried tofu in this mixture.
