For the Creamy Finish
  • 1 cup Cheddar Cheese Grated
  • 1/4 cup Almond Milk Adjust for consistency

Method
 

Step-by-Step Instructions
  1. Wash and cut the cauliflower into large bite-sized florets.
  2. Bring a large pot of salted water to a boil and add the cauliflower florets and minced garlic. Boil for 7 to 10 minutes until tender.
  3. Drain the cauliflower and garlic in a colander and let it sit to remove excess water.
  4. In the empty pot, melt butter or ghee, then add the minced garlic and sauté for 1-2 minutes until golden.
  5. Blend the drained cauliflower and sautéed garlic in a food processor until smooth and creamy.
  6. Return the blended mixture to the pot, season with salt, pepper, and nutmeg. Stir in almond milk as needed and fold in the cheddar cheese before serving.
