- Wash and cut the cauliflower into large bite-sized florets.
- Bring a large pot of salted water to a boil and add the cauliflower florets and minced garlic. Boil for 7 to 10 minutes until tender.
- Drain the cauliflower and garlic in a colander and let it sit to remove excess water.
- In the empty pot, melt butter or ghee, then add the minced garlic and sauté for 1-2 minutes until golden.
- Blend the drained cauliflower and sautéed garlic in a food processor until smooth and creamy.
- Return the blended mixture to the pot, season with salt, pepper, and nutmeg. Stir in almond milk as needed and fold in the cheddar cheese before serving.
