For the Filling
  • 4 cups Peaches Fresh, ripe; pitted, peeled, and chopped.
  • 1 cup Heavy Cream Evaporated milk can be used for a lighter version.
  • 1 teaspoon Ground Cinnamon Nutmeg can be substituted if desired.

Method
 

Preparation
  1. Preheat the oven to 350°F (180°C) and prepare a 9x13-inch baking pan by greasing or lining with parchment paper.
  2. In a mixing bowl, combine all-purpose flour, granulated sugar, and a pinch of salt. Cut in cold unsalted butter until mixture resembles coarse crumbs.
  3. Press the crumbly mixture into the bottom of the prepared baking pan and bake for 15 minutes, or until lightly golden at the edges.
  4. While the crust is baking, prepare the streusel topping by mixing brown sugar into the reserved crumb mixture until clumps form.
  5. In another bowl, mix together sugar, flour, ground cinnamon, and chopped peaches. Stir in the heavy cream until blended.
  6. Once the crust is done, pour the peach filling over it and sprinkle the streusel topping evenly on top.
  7. Return to the oven and bake for an additional 45 minutes, until golden brown and bubbling.
  8. Remove from the oven and let cool on a wire rack for at least 2 hours before cutting into squares.

Notes
