Preparation
- Preheat the oven to 350°F (180°C) and prepare a 9x13-inch baking pan by greasing or lining with parchment paper.
- In a mixing bowl, combine all-purpose flour, granulated sugar, and a pinch of salt. Cut in cold unsalted butter until mixture resembles coarse crumbs.
- Press the crumbly mixture into the bottom of the prepared baking pan and bake for 15 minutes, or until lightly golden at the edges.
- While the crust is baking, prepare the streusel topping by mixing brown sugar into the reserved crumb mixture until clumps form.
- In another bowl, mix together sugar, flour, ground cinnamon, and chopped peaches. Stir in the heavy cream until blended.
- Once the crust is done, pour the peach filling over it and sprinkle the streusel topping evenly on top.
- Return to the oven and bake for an additional 45 minutes, until golden brown and bubbling.
- Remove from the oven and let cool on a wire rack for at least 2 hours before cutting into squares.

Store the bars in an airtight container in the fridge for up to 3 days. You can freeze them for up to 3 months. To reheat, warm in the oven at 350°F (175°C) for about 10 minutes.
