  • 8 ounces penne pasta or fusilli, rigatoni
  • 1 teaspoon salt for boiling water
For the Chicken
  • 1 pound boneless skinless chicken breasts can substitute with rotisserie chicken
For the Sauce
  • 2 tablespoons olive oil extra virgin preferred
  • 3 tablespoons unsalted butter
  • 3 cloves garlic minced
  • 1 cup heavy cream adjust for thickness
  • 1 cup whole milk
  • 1 cup basil pesto can use homemade or sun-dried tomato pesto
  • 1/2 cup Parmesan cheese grated
For Extra Flavor
  • 2 cups baby spinach optional, can replace with mushrooms
  • 1 cup mozzarella cheese shredded
  • 1/4 cup extra Parmesan cheese for topping

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish.
  2. Bring a large pot of salted water to a boil. Cook pasta until al dente, about 2 minutes less than package instructions.
  3. In a skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper and cook until golden brown, about 5–6 minutes. Cut into bite-sized pieces.
  4. In the same skillet, melt butter, add garlic, and sauté for 1-2 minutes. Stir in cream and milk, simmer for 2-3 minutes.
  5. Add pesto and Parmesan cheese, mixing until smooth. Combine chicken, pasta, and optional spinach in a bowl. Pour sauce over and toss.
  6. Transfer mixture to prepared baking dish, top with mozzarella and extra Parmesan.
  7. Bake uncovered for 20–25 minutes until golden brown.
  8. Let it rest for 5 minutes before serving.
