Ingredients

For the Filling
  • 2 cups Cooked shredded chicken breast Use rotisserie chicken for quicker prep.
  • 1/2 cup Buffalo wing sauce Adjust based on your heat preference.
  • 1/2 cup Ranch dressing Substitute with blue cheese dressing if preferred.
  • 1 teaspoon Kosher salt Scale back if using salted ranch.
  • 1 teaspoon Garlic powder Fresh garlic can work in its place.
  • 1 teaspoon Onion powder Feel free to use fresh onion.
  • 1/4 teaspoon Ground cayenne pepper Optional heat enhancer.
  • 1 cup Freshly grated Monterey Jack cheese Cheddar works as a great alternative.
For the Taquitos
  • 8 pieces Flour or corn tortillas Flour is softer, while corn is gluten-free.
  • 1/4 cup Chopped green onions Optional garnish.
To Achieve Crispiness
  • 2 tablespoons Olive oil or cooking spray Essential for crispy texture.

Equipment

  • Air fryer

Method

Step-by-Step Instructions
  1. In a medium bowl, combine the cooked shredded chicken breast, Buffalo wing sauce, ranch dressing, kosher salt, garlic powder, onion powder, ground cayenne pepper, and freshly grated Monterey Jack cheese. Mix everything together until well blended and creamy.
  2. Lay out your flour or corn tortillas on a flat surface. Divide the chicken filling evenly among the tortillas, placing it in the center of each one. Roll the tortillas tightly around the filling, securing the ends with toothpicks.
  3. Preheat your air fryer to 380°F (193°C) for about 5 minutes. Mist the air fryer basket with olive oil or cooking spray.
  4. Place the assembled taquitos seam-side down in the preheated air fryer basket. Mist the tops lightly with cooking spray. Cook the taquitos at 380°F (193°C) for 8-12 minutes, flipping them halfway through until crispy and golden brown.
  5. Once finished cooking, carefully remove the taquitos from the basket, ensuring the toothpicks are secure. Let them rest for a couple of minutes. Garnish with chopped green onions before serving.
