Step-by-Step Instructions
  1. In a large bowl, combine buttermilk, kosher salt, and buffalo hot sauce to create a flavorful brine. Add chicken wing pieces and refrigerate for 90 minutes.
  2. While the wings are brining, mix together flour, smoked paprika, garlic powder, onion powder, and black pepper in a separate bowl. Remove wings from brine and dredge in the flour mixture. Refrigerate for 30 minutes.
  3. Preheat oven to 350°F (175°C). Bake wings for 20 minutes, flip and spray with cooking spray, then bake for another 20 minutes. Increase oven temperature to 425°F (220°C) and bake until golden and crispy, about 10-15 minutes.
  4. In a saucepan over low heat, combine unsalted butter, buffalo hot sauce, and honey. Stir until butter melts and well combined, creating a hot honey sauce.

Allow wings to brine for the full 90 minutes for maximum juiciness. Refrigerating breaded wings helps the coating stick better.
