  1. Prepare Pickles (Optional): Thinly shave cucumber, sprinkle with salt, let sit for an hour, rinse, and combine with sesame oil, sesame seeds, and chili crisp.
  2. Cook Eggs: Place eggs in a saucepan, cover with cold water, boil, cover, and remove from heat. Let sit for 12 minutes, then cool in ice bath, peel, and smash.
  3. Mix Egg Salad: Combine smashed eggs with mayonnaise, ginger, garlic, scallions, and chili crisp. Mix well; add cornstarch if frying patties.
  4. Form Patties: Shape the egg salad mixture into small 2-ounce patties; freeze for about 15 minutes if frying.
  5. Fry Patties: Heat canola oil in a pan; fry patties for 2-3 minutes on each side until golden-brown.
