Step-by-Step Instructions
  1. Prepare the Garlic Sauce: In a medium saucepan, combine 3/4 cup of soy sauce and 3/4 cup of sugar. Bring to a boil over medium heat and simmer for 2-3 minutes until thickened. Stir in garlic, green onion, sesame oil, red chili flakes, and white pepper. Boil for an additional minute and set aside.
  2. Marinate Chicken: In a large bowl, combine chicken, 4-5 tablespoons of garlic sauce, cornstarch, and vegetable oil. Mix well and let marinate for 30 minutes at room temperature or refrigerate overnight.
  3. Dredge Chicken: In a separate dish, whisk together flour, cornstarch, and salt. Add 3 tablespoons of reserved garlic sauce, and mix to form clumps for the coating.
  4. Fry Chicken: Heat vegetable oil in a deep frying pan to about 350°F. Coat marinated chicken in the dry mixture and fry in batches for 6-8 minutes until golden brown. Drain on paper towels.
