  • 1 medium butternut squash peeled, seeded, and cut into cubes
  • 2 tablespoons honey for caramelization
  • 2 tablespoons olive oil for roasting
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
For the Topping
  • 1 cup dried cranberries for tartness
  • 1 cup feta cheese crumbled, can substitute with goat cheese
  • 1/2 cup pumpkin seeds for crunch

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Peel, seed, and chop the butternut squash into bite-sized cubes and spread them evenly on a large baking sheet.
  2. Drizzle the cubed butternut squash with olive oil, sprinkle with salt and black pepper, and drizzle with honey. Toss everything until coated.
  3. Roast the butternut squash in the preheated oven for about 25–30 minutes, stirring halfway through for even roasting.
  4. Once roasted, sprinkle dried cranberries and crumbled feta cheese on top of the hot squash.
  5. Sprinkle pumpkin seeds over the mixture and return to the oven for an additional 5 minutes.
  6. Let cool for a few minutes before serving. Enjoy warm as a centerpiece or side dish.
