- Preheat your oven to 400°F (200°C). Peel, seed, and chop the butternut squash into bite-sized cubes and spread them evenly on a large baking sheet.
- Drizzle the cubed butternut squash with olive oil, sprinkle with salt and black pepper, and drizzle with honey. Toss everything until coated.
- Roast the butternut squash in the preheated oven for about 25–30 minutes, stirring halfway through for even roasting.
- Once roasted, sprinkle dried cranberries and crumbled feta cheese on top of the hot squash.
- Sprinkle pumpkin seeds over the mixture and return to the oven for an additional 5 minutes.
- Let cool for a few minutes before serving. Enjoy warm as a centerpiece or side dish.
