  • 2 cups Rotisserie Chicken shredded
  • 1 packet Taco Seasoning
For the Toppings
  • 1 can Canned Black Beans rinsed and drained
  • 1 can Canned Corn
  • 1 cup Salsa or pico de gallo
  • 1 cup Shredded Cheese Cheddar or Mexican Blend
  • 0.25 cup Fresh Cilantro optional
  • 1 cup Diced Tomatoes
Optional Extras
  • 1 piece Avocado diced or sliced
  • to taste Jalapeños sliced

Method
 

Preparation Steps
  1. Preheat your oven to 450°F (232°C) and prepare a baking sheet with corn tortillas in a single layer.
  2. Brush both sides of each tortilla with canola oil evenly.
  3. Bake the tortillas for 10 minutes, flipping halfway, until golden and crispy.
  4. In a medium saucepan, combine shredded chicken, taco seasoning, salsa, canned corn, and black beans over medium heat for 5 minutes.
  5. Take the crisp tortillas from the oven and top each with a spoonful of the warm chicken mixture.
  6. Sprinkle shredded cheese on top of each tortilla and return to the oven for 5 minutes until the cheese is melted.
  7. After baking, garnish the tostadas with fresh cilantro and diced tomatoes.
  8. Serve the tostadas hot with optional toppings like avocado and jalapeños.
