Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Toss diced russet potatoes with olive oil, salt, and pepper until coated. Spread in a single layer on a baking sheet and roast for 20-25 minutes.
  3. Heat olive oil in a skillet over medium-high heat. Add chicken coated with spices and sauté for 6-8 minutes until cooked through.
  4. Add broccoli florets and red bell pepper to the skillet. Sauté for another 3-4 minutes until tender yet crisp.
  5. Combine roasted potatoes with chicken and veggies in the skillet, tossing gently to mix.
