Step‑by‑Step Instructions
  1. Begin by thoroughly cleaning the king trumpet mushrooms under cold water to remove any dirt. Once clean, shred the mushrooms into small, bite-sized pieces.
  2. In a large mixing bowl, combine the shredded mushrooms with olive oil, cumin, paprika, salt, and citrus juice. Toss to coat evenly and let sit for about 5 minutes.
  3. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and spread the seasoned mushrooms evenly across the sheet. Bake for 30-35 minutes, stirring halfway through.
  4. Once baked, let the Vegan Carnitas cool for a few minutes before serving them in warm corn tortillas, topped with avocado, shredded cabbage, and salsa.
