  • 4 cloves Garlic Fresh for best flavor.
  • 3 medium Carrots Cut into chunks.
  • 2 medium Potatoes Can substitute with sweet potatoes.
For the Broth and Sauce
  • 4 cups Beef Broth Low-sodium recommended.
  • 2 tablespoons Worcestershire Sauce
  • 1 cup Red Wine Optional.
  • 2 tablespoons Tomato Paste
For Optional Seasoning
  • 2 sprigs Fresh Herbs (Thyme/Rosemary) Use as desired.
  • 1 teaspoon Dried Thyme Optional.
  • 1 teaspoon Dried Rosemary Optional.

Method
 

Cooking Steps
  1. Generously season your chuck roast with salt and pepper on all sides.
  2. In a large skillet, heat olive oil and sear the roast for 3-4 minutes on each side.
  3. Chop onion, garlic, carrots, and potatoes; layer them in the bottom of the Crock Pot.
  4. Transfer the seared roast to the Crock Pot over the vegetables. Add broth and Worcestershire sauce.
  5. Cover and cook on low for 8-10 hours or high for 4-6 hours.
  6. Remove the roast when done and let it rest for 10 minutes before slicing.
