Ingredients

For the Sauce
  • 2 tbsp Olive Oil Helps to caramelize vegetables.

  • 1/4 cup Soy Sauce or Coconut Aminos Choose tamari for gluten-free.
  • 1/4 cup Pineapple Juice Reserve if using canned pineapple.
  • 2 tbsp Honey or Brown Sugar Adjust to taste.
  • 1 tbsp Rice Vinegar or Apple Cider Vinegar Substitute pineapple juice if necessary.
  • 1 tbsp Cornstarch Optional for thickening the glaze.

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and prepare a sheet pan with parchment paper or cooking spray.
  2. Whisk together soy sauce, pineapple juice, honey, and rice vinegar in a medium bowl. Set aside.
  3. Pat chicken thighs dry, place in a bowl, and marinate with half of the sauce for at least 15 minutes.
  4. Arrange marinated chicken on the sheet pan and scatter vegetables around it. Drizzle with olive oil and sprinkle garlic, salt, pepper, and paprika.
  5. Bake for 25-30 minutes, flipping chicken halfway through until the internal temperature reaches 165°F (74°C).
  6. In the last 10 minutes, brush remaining sauce on the chicken and optionally broil for 2-3 minutes.
  7. Let it rest for a few minutes, garnish with sesame seeds or cilantro, and serve warm.
