Preparation Steps
- Preheat your oven to 400°F (200°C) and prepare a sheet pan with parchment paper or cooking spray.
- Whisk together soy sauce, pineapple juice, honey, and rice vinegar in a medium bowl. Set aside.
- Pat chicken thighs dry, place in a bowl, and marinate with half of the sauce for at least 15 minutes.
- Arrange marinated chicken on the sheet pan and scatter vegetables around it. Drizzle with olive oil and sprinkle garlic, salt, pepper, and paprika.
- Bake for 25-30 minutes, flipping chicken halfway through until the internal temperature reaches 165°F (74°C).
- In the last 10 minutes, brush remaining sauce on the chicken and optionally broil for 2-3 minutes.
- Let it rest for a few minutes, garnish with sesame seeds or cilantro, and serve warm.
