  • 4 cups King Oyster Mushrooms trim the tough ends
  • 1 cup Water for marinating broth
  • 2 tablespoons Kelp Flakes or substitute with nori
  • 1 tablespoon Old Bay Seasoning
  • 1 teaspoon Salt to taste
For Cooking
  • 2 tablespoons Vegan Butter or olive oil for lower fat
  • 2 cloves Garlic optional, minced
  • 1 tablespoon Lemon Juice optional

Step-by-Step Instructions
  1. Prepare the Mushrooms: Clean the king oyster mushrooms, remove tough ends, slice into 1/4 inch rounds, and shape into shrimp-like pieces.
  2. Make the Marinade: In a saucepan, combine water, kelp flakes, Old Bay seasoning, and salt. Boil, stirring occasionally.
  3. Marinate the Mushrooms: Pour hot marinade over mushrooms in a bowl. Soak for at least 20 minutes.
  4. Sauté the Mushrooms: Heat vegan butter in a skillet over medium heat. Add marinated mushrooms and sauté for 3 minutes on each side.
  5. Add Garlic (Optional): If using, add minced garlic after flipping mushrooms and sauté for another minute.
  6. Serve and Enjoy: Remove vegan shrimp from skillet and serve immediately in your favorite dish.
