Preparation Steps
- Preheat your oven to 375°F (190°C). Prepare your baking dish.
- Grease a 9x13-inch baking dish with olive oil.
- Cook lasagna noodles in salted boiling water until al dente, about 8-10 minutes. Drain and lay flat.
- In a skillet, heat olive oil and sauté chopped onion for 3-4 minutes.
- Add minced garlic and sliced mushrooms to the skillet, cooking for 5-7 minutes.
- Incorporate chopped spinach into the skillet and cook until wilted, about 2-3 minutes.
- Assemble the lasagna layers starting with marinara sauce, followed by noodles, ricotta, mushroom mixture, and cheeses.
- Repeat the layers and finish with a final layer of noodles topped with marinara sauce.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes.
- Let the lasagna cool for 10 minutes before slicing and serving.
