  • 1 teaspoon Dried Thyme Or fresh thyme if available
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Pepper Adjust to taste
  • 6 ounces Spinach Chopped
Cheese Layers
  • 15 ounces Ricotta Cheese Or cottage cheese
  • 2 cups Mozzarella Cheese Shredded
  • 1/2 cup Parmesan Cheese Grated
Sauce
  • 2 cups Marinara Sauce Avoid over-saucing

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C). Prepare your baking dish.
  2. Grease a 9x13-inch baking dish with olive oil.
  3. Cook lasagna noodles in salted boiling water until al dente, about 8-10 minutes. Drain and lay flat.
  4. In a skillet, heat olive oil and sauté chopped onion for 3-4 minutes.
  5. Add minced garlic and sliced mushrooms to the skillet, cooking for 5-7 minutes.
  6. Incorporate chopped spinach into the skillet and cook until wilted, about 2-3 minutes.
  7. Assemble the lasagna layers starting with marinara sauce, followed by noodles, ricotta, mushroom mixture, and cheeses.
  8. Repeat the layers and finish with a final layer of noodles topped with marinara sauce.
  9. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes.
  10. Let the lasagna cool for 10 minutes before slicing and serving.
