Step-by-Step Instructions
  1. Make Pistachio Paste: Blend shelled pistachios in a food processor for 2-3 minutes, until smooth and creamy.
  2. Prepare Tart Shell: Combine flour, sugar, and vegan butter in a bowl. Mix until crumbly. Gradually add non-dairy milk until a soft dough forms.
  3. Bake Tart Shell: Preheat oven to 350°F (175°C). Bake tart shell for 15-20 minutes until golden. Let cool.
  4. Prepare Filling: Mix almond meal, pistachio paste, sugar, and non-dairy milk until smooth.
  5. Make Pastry Cream: Warm non-dairy milk in a saucepan. Whisk cornstarch and sugar together and add to hot milk until thick.
  6. Assemble Tart: Pour the filling mixture into the cooled tart shell. Bake for another 25 minutes until set.
  7. Add Pastry Cream: Spread chilled pastry cream over the top and drizzle melted dark chocolate if desired.
