Step‑By‑Step Instructions
  1. Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente, about 8-10 minutes. Drain and reserve a small cup of pasta water.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant but not browned.
  3. Add 3 cups of fresh chopped spinach and ½ cup of chopped sun-dried tomatoes to the skillet. Cook for 2-3 minutes until spinach wilts.
  4. Pour in 1 cup of heavy cream and reduce heat to low. Stir gently to incorporate the mixture and warm for 2 minutes.
  5. Add ½ cup of grated Parmesan cheese and ¼ teaspoon of red pepper flakes. Stir until cheese melts and sauce thickens for 2-3 minutes.
  6. Add the drained spaghetti to the skillet, tossing gently to coat. Add reserved pasta water if needed to adjust consistency.
  7. Let the dish sit for a minute and garnish with fresh basil if desired. Serve hot and enjoy!
