Step-by-Step Instructions for Ube Brownies
  1. Preheat your oven to 180°C (350°F). Gather your ingredients and equipment.
  2. Melt 150g of unsalted butter in the microwave for about 30 to 50 seconds until completely melted.
  3. Stir in 75g of light brown sugar and 130g of white sugar until dissolved and mixture is smooth.
  4. Add one large egg and 2 teaspoons of ube extract to the sugar mixture; blend until shiny.
  5. Sift 175g of all-purpose flour and 2 tablespoons of cornstarch into the bowl, fold until just combined.
  6. Fold in ⅛ teaspoon of salt (if using) and 150g of white chocolate chips until well distributed.
  7. Pour the mixture into an 8-inch square baking pan and smooth the top evenly.
  8. Bake for 20 to 25 minutes until edges look set and center has a slight wobble.
