- Cook the udon noodles according to the package instructions, typically boiling for 5-6 minutes until tender. Drain and rinse under cold water. Set aside.
- Heat sesame oil in a skillet over medium-high heat. Add sliced chicken and sauté for 5-7 minutes until golden brown and cooked through. Remove and set aside.
- In the same skillet, stir-fry the bell peppers and carrots for 3-4 minutes until tender yet crisp. Avoid overcooking.
