Step-by-Step Instructions
  1. Cook the udon noodles according to the package instructions, typically boiling for 5-6 minutes until tender. Drain and rinse under cold water. Set aside.
  2. Heat sesame oil in a skillet over medium-high heat. Add sliced chicken and sauté for 5-7 minutes until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, stir-fry the bell peppers and carrots for 3-4 minutes until tender yet crisp. Avoid overcooking.
  4. Return the chicken to the skillet and add the udon noodles with soy sauce and vegetable broth. Toss gently for 2-3 minutes until well combined.
