Ingredients

For the Filling
  • 1 tbsp Olive Oil Adds richness and aids in sautéing; substitute canola or vegetable oil if needed.
  • 1 lb Ground Chicken Lean protein source replacing traditional beef; ground turkey is a suitable alternative.
  • 1 small Onion, finely chopped Adds sweetness and depth; use shallots for a milder flavor if desired.
  • 2 cloves Garlic, minced Enhances the overall flavor profile; garlic powder can be a quick substitute in a pinch.
  • 2 tbsp Cajun Seasoning Provides the signature spicy, smoky flavor; adjust to taste or make your own blend for a personalized kick.
  • 1 tbsp Tomato Paste Adds umami flavor and depth to the sauce; substitute with tomato purée if you don’t have paste on hand.
  • 1/2 cup Chicken Broth Provides moisture and enhances the sauce; opt for vegetable broth for a vegetarian twist.
  • 1/2 cup Tomato Sauce Forms the base of the sloppy joe filling; using homemade tomato sauce brings a fresh taste.
  • 1 tbsp Worcestershire Sauce Adds saltiness and depth to the dish; soy sauce can be used for a similar effect if necessary.
  • 1 tsp Brown Sugar Balances heat with a hint of sweetness; honey or maple syrup serve as tasty substitutes.
  • Salt Enhances flavor; adjust according to taste.
For the Creamy Cheese Sauce
  • 2 tbsp Unsalted Butter Used to make the roux for the cheese sauce and to butter the buns; margarine works as a dairy-free alternative.
  • 2 tbsp All-Purpose Flour Thickens the cheese sauce beautifully; use cornstarch for a gluten-free option.
  • 1 cup Whole Milk Creates a creamy texture in the cheese sauce; almond or oat milk works well for dairy-free needs.
  • 8 oz Sharp Cheddar Cheese, freshly shredded Provides a creamy and tangy flavor; substitute with any cheese that melts well.
  • 1/4 tsp Paprika Enhances flavor and color of the cheese sauce beautifully.
For the Assembly
  • 4-6 Brioche Buns, split and toasted Soft and buttery texture complements the filling; swap for whole grain or gluten-free buns if desired.
  • Black Pepper For seasoning the final assembly; adjust to taste for your preference.

  • Large skillet
  • Saucepan

Method

Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add 1 pound of ground chicken, crumbling it as it cooks for about 5-7 minutes until no longer pink. Stir in 1 small finely chopped onion and sauté until soft, about 3-4 minutes. Add 2 minced garlic cloves and 2 tablespoons of Cajun seasoning, cooking everything until fragrant for about 1 minute.
  2. Mix in 1 tablespoon of tomato paste, cooking until it becomes glossy. Then, gradually pour in ½ cup of chicken broth, followed by ½ cup of tomato sauce and 1 tablespoon of Worcestershire sauce. Stir well and bring the mixture to a gentle simmer. Allow it to cook uncovered for around 8-10 minutes, stirring occasionally until thickened. Taste for seasoning, adding salt and 1 teaspoon of brown sugar if desired.
  3. In a separate saucepan, melt 2 tablespoons of unsalted butter over medium heat. Once bubbling, whisk in 2 tablespoons of all-purpose flour to create a roux, cooking for about 1 minute. Gradually add 1 cup of whole milk while whisking continuously until the mixture lightly coats the back of a spoon, which should take about 4-5 minutes.
  4. Reduce the heat to low and stir in 8 ounces of freshly shredded sharp cheddar cheese and ¼ teaspoon of paprika. Continue stirring until the cheese is fully melted and the sauce is smooth, making sure not to let it boil. Taste your cheese sauce and adjust with salt if necessary for flavor.
  5. Take your brioche buns and butter the insides. Heat a skillet or broiler over medium heat and toast the buns for 1-2 minutes, or until golden and crispy.
  6. Start assembling by placing spoonfuls of the Cajun chicken filling onto each toasted bottom bun. Drizzle the warm creamy cheese sauce generously over the chicken filling, then finish with a sprinkle of freshly cracked black pepper. Crown each with the top bun and serve.
