Step‑by‑Step Instructions
  1. Soak the dried mixed fruits in brandy overnight in an airtight container.
  2. Preheat your oven to 160°C (320°F) and line a traybake pan with parchment paper.
  3. Cream together butter and sugar until light and fluffy, then add the eggs one at a time.
  4. Sift in self-raising flour and fold gently into the mixture until just combined.
  5. Fold in the soaked fruits gently to maintain the fluffiness of the batter.
  6. Transfer the batter to the prepared pan and bake for 60–70 minutes or until a skewer comes out clean.
  7. Cool the cake in the pan for 15 minutes, then transfer to a wire rack to cool completely.
