  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Potatoes
  • 1.5 pounds Baby Potatoes halved
  • 3 tablespoons Olive Oil
  • 1 teaspoon Paprika optional
  • 2 tablespoons Fresh Parsley chopped for garnish

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, toss halved baby potatoes with olive oil, paprika, salt, and pepper until well-coated. Transfer to a baking sheet in a single layer.
  3. Roast the potatoes in the preheated oven for 20-25 minutes, flipping halfway through.
  4. In a saucepan over medium heat, melt butter and sauté minced garlic for 1-2 minutes.
  5. Season cod fillets with salt and pepper and cook in a hot skillet for 3-5 minutes on each side.
  6. Pour garlic butter sauce over the cooked cod in the skillet.
  7. Serve the cod with roasted potatoes, drizzling any remaining garlic butter on top and garnishing with parsley.
