Step-by-Step Instructions
  1. Prepare Filling - Soften cream cheese in a mixing bowl until fluffy. Gradually fold in feta, cranberries, rosemary, thyme, brown sugar, pepper, garlic powder, and salt.
  2. Assemble First Log - Roll out one sheet of puff pastry and spread half of the filling evenly. Roll tightly into a log and seal the edge with water.
  3. Chill and Slice - Wrap log in plastic wrap and freeze for 15-20 minutes. Cut into ½-inch thick rounds.
  4. Repeat for Second Log - Repeat rolling and filling with the second sheet of puff pastry.
  5. Prepare for Baking - Preheat oven to 400°F (200°C) and line baking sheets with parchment paper. Arrange pinwheel slices on sheets.
  6. Apply Egg Wash and Bake - Whisk egg with water or milk, brush on top of pinwheels, and bake for 15-20 minutes until golden.
