Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub beets, wrap tightly in foil.

  4. Roast beets in foil for 45 to 60 minutes until fork-tender.
  5. Spread seasoned carrots on a baking sheet and roast for 30 to 40 minutes.
  6. Allow roasted beets to cool, then peel and slice into rounds or wedges.
  7. Wash and dry mixed leafy greens, then arrange on a serving plate.
  8. Layer the sliced beets and roasted carrots on top of the greens.
  9. Crumble the burrata over the top and sprinkle with nuts.
