Step‑by‑Step Instructions for Easy Thai Baked Chicken
  1. In a food processor, combine chopped cilantro, full-fat coconut milk, fresh basil leaves, jalapeños, garlic, ginger, ground coriander, brown sugar, sea salt, and black pepper. Blend until smooth, about 1-2 minutes.
  2. Place chicken in a resealable plastic bag or a large bowl. Pour marinade over the chicken, ensuring it's well-coated. Seal and refrigerate for a minimum of 2 hours, ideally overnight.
  3. Preheat oven to 375°F (190°C). Remove chicken from refrigerator when ready to cook.
  4. Arrange the marinated chicken in a baking dish, discarding excess marinade. Cover with foil for the first half, then uncover for the last few minutes.
  5. Bake for about 25-30 minutes for boneless chicken or 30-40 minutes for bone-in pieces, until chicken reaches 165°F (75°C).
  6. Remove from the oven and let rest for a few minutes. Serve with lime wedges.
