- Preheat your oven to 180°C (350°F) and grease a traybake pan with butter or line it with parchment paper.
- In a large mixing bowl, cream together the room temperature butter and light brown sugar using an electric mixer on medium speed until light and fluffy, approximately 3-5 minutes.
- Add the room temperature eggs one at a time, mixing well after each addition until fully incorporated and the batter appears smooth and creamy.
- In a separate bowl, sift together the all-purpose flour, baking powder, and your chosen spices. Gradually fold the dry mixture into the wet ingredients using a spatula or wooden spoon, being careful not to overmix.
- Gently stir in the mixed dried fruits until evenly distributed throughout the batter.
- Carefully pour the batter into the prepared traybake pan, spreading it evenly and tapping gently on the counter to remove air bubbles.
- Place the traybake in the preheated oven for 25-30 minutes or until a skewer inserted comes out clean.
- Once baked, remove from the oven and let cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
