Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and grease a traybake pan with butter or line it with parchment paper.
  2. In a large mixing bowl, cream together the room temperature butter and light brown sugar using an electric mixer on medium speed until light and fluffy, approximately 3-5 minutes.
  3. Add the room temperature eggs one at a time, mixing well after each addition until fully incorporated and the batter appears smooth and creamy.
  4. In a separate bowl, sift together the all-purpose flour, baking powder, and your chosen spices. Gradually fold the dry mixture into the wet ingredients using a spatula or wooden spoon, being careful not to overmix.
  5. Gently stir in the mixed dried fruits until evenly distributed throughout the batter.
  6. Carefully pour the batter into the prepared traybake pan, spreading it evenly and tapping gently on the counter to remove air bubbles.
