  • 1 pound boneless skinless chicken thighs chicken breasts can be used, cooking time may vary
  • 2 tablespoons vegetable oil olive oil or any neutral oil works well

Method
 

Cooking Instructions
  1. Prepare the Marinade: In a large mixing bowl, whisk together lime juice, honey, chopped cilantro, minced garlic, chili powder, cumin, onion powder, kosher salt, and cayenne pepper until well combined.
  2. Marinate the Chicken: Add chicken thighs to the bowl with the marinade, ensuring each piece is coated. Cover and refrigerate for at least 20 minutes.
  3. Preheat the Oven: While chicken marinates, preheat your oven to 400°F (200°C).
  4. Sear the Chicken: Heat vegetable oil in a skillet over medium-high heat. Sear chicken thighs for 2-3 minutes on each side until golden brown.
  5. Bake the Chicken: Transfer the skillet to the preheated oven and bake for 8-10 minutes until the internal temperature reaches 165°F (74°C).
  6. Prepare the Glaze: Pour the remaining marinade into a saucepan, bring to a gentle boil, then reduce to a simmer and thicken for 5-10 minutes.
  7. Glaze the Chicken and Serve: Remove chicken from the oven and brush with the thickened glaze. Serve warm.
