- Pat the steak cubes dry with paper towels and season generously with salt and pepper. Allow to rest while heating the skillet.
- Heat olive oil in a skillet over medium-high heat. Add steak cubes in a single layer and sear for 1-2 minutes on each side until golden-brown.
- Reduce heat and add butter to the skillet. Once melted, add minced garlic, stirring for 30 seconds until fragrant.
- Add sliced zucchini to the skillet and sauté for 3-5 minutes until tender-crisp.
- Return the seared steak to the skillet, tossing with zucchini and garlic butter for 1-2 minutes.
- Transfer to a serving plate and garnish with parsley if desired. Serve immediately.
