Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Rinse the whole chicken under cold water and pat it dry thoroughly.
  3. Combine olive oil, melted butter, and lemon juice in a bowl, then pour over the chicken, rubbing it under the skin.
  4. Mix softened butter with minced garlic, rosemary, thyme, lemon zest, and paprika, then rub it all over the chicken.
  5. Stuff the chicken's cavity with the halved garlic head, quartered lemon, and herb sprigs.
  6. Roast the chicken for about 1 hour and 15-25 minutes, basting halfway through.
  7. Broil the chicken for an extra crispy finish during the last 2-3 minutes.
  8. Let the chicken rest for about 15 minutes before carving.
