For the Meatloaf
  • 2 tablespoons Olive Oil Can substitute with avocado oil.
  • 1 medium Onion Finely diced.
  • 2 cloves Garlic Minced.
  • 1 pound Ground Chicken Can substitute with ground turkey.
  • 1 cup Seasoned Breadcrumbs Use gluten-free breadcrumbs if needed.
  • 1/2 cup Milk Can substitute with chicken broth.
  • 1/2 cup Parmesan Cheese Grated.
  • 1 large Egg Acts as a binder.
  • 1/4 cup Fresh Parsley Chopped.
  • 2 teaspoons Italian Seasoning
  • 1 teaspoon Salt
  • 8 ounces Mozzarella Cheese Strings Ensure fully enclosed.
  • 1 cup Marinara Sauce Use homemade or store-bought.
  • 1 cup Panko Breadcrumbs
  • 2 tablespoons Butter Melted.
  • 1 cup Shredded Mozzarella Cheese

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F) and line a baking sheet with aluminum foil.
  2. In a skillet, heat olive oil over medium heat, add onion and garlic, sauté for 3–5 minutes until softened.
  3. In a large mixing bowl, combine ground chicken, sautéed onion and garlic, breadcrumbs, milk, Parmesan, egg, parsley, Italian seasoning, and salt. Mix gently.
  4. Transfer two-thirds of the meat mixture to the baking sheet and shape into a loaf, creating a well for the mozzarella.
  5. Press remaining meat mixture over the mozzarella well, sealing it well.
  6. Spread marinara sauce over the top of the meatloaf.
  7. Bake in the preheated oven for about 45 minutes, until the internal temperature reaches 74°C (165°F).
  8. Mix panko breadcrumbs, parmesan, butter, and parsley in a bowl for the topping.
  9. After 45 minutes, remove from the oven, sprinkle shredded mozzarella and panko topping over the meatloaf, and bake for an additional 15-20 minutes.
  10. Allow the meatloaf to rest for about 10 minutes before slicing.

Notes

Allow the sautéed onion and garlic to cool slightly before adding to the meat mixture to avoid cooking the egg. Use a thermometer to check doneness, aiming for 74°C (165°F).
