- Preheat your oven to 200°C (400°F) and line a baking sheet with aluminum foil.
- In a skillet, heat olive oil over medium heat, add onion and garlic, sauté for 3–5 minutes until softened.
- In a large mixing bowl, combine ground chicken, sautéed onion and garlic, breadcrumbs, milk, Parmesan, egg, parsley, Italian seasoning, and salt. Mix gently.
- Transfer two-thirds of the meat mixture to the baking sheet and shape into a loaf, creating a well for the mozzarella.
- Press remaining meat mixture over the mozzarella well, sealing it well.
- Spread marinara sauce over the top of the meatloaf.
- Bake in the preheated oven for about 45 minutes, until the internal temperature reaches 74°C (165°F).
- Mix panko breadcrumbs, parmesan, butter, and parsley in a bowl for the topping.
- After 45 minutes, remove from the oven, sprinkle shredded mozzarella and panko topping over the meatloaf, and bake for an additional 15-20 minutes.
- Allow the meatloaf to rest for about 10 minutes before slicing.
