For the Filling
  • 1 cup Spinach Fresh or thawed frozen
  • 1 cup Ham Diced; can substitute with bacon or turkey
  • 1 cup Cheese Grated mix of mozzarella and cheddar
For the Finishing Touch
  • 1 egg Egg (for egg wash) Milk can be used as a vegan alternative

Method
 

Step-by-Step Instructions
  1. Prepare the Puff Pastry by cutting chilled pastry into 5-inch squares and refrigerate. Preheat oven to 400°F (200°C).
  2. Make the Bechamel Sauce by melting butter in a saucepan, adding flour and salt for 2 minutes until golden.
  3. Add Milk and thicken the mixture by whisking in warm milk and cooking until thick for about 7 minutes.
  4. Stir in Spinach and Other Fillings, adding spinach, diced ham, and half the cheese, mixing until integrated.
  5. Fill the Pastry Squares with 1-2 tablespoons of the mixture, folding corners over to seal.
  6. Apply the Egg Wash by mixing egg with water and brushing over pastry tops.
  7. Bake to Perfection for about 20 minutes until puffed and golden brown.
  8. Serve and Enjoy while the puffs cool slightly, paired with a fresh salad if desired.
