Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather your ingredients and equipment.
  2. Melt 2 tablespoons of unsalted butter in a large skillet over medium heat. Add finely chopped shallot and sauté for 3-4 minutes.
  3. Sprinkle in 2 tablespoons of all-purpose flour and cook for 1 minute. Gradually whisk in 1 cup of whole milk until smooth.
  4. Remove from heat and stir in half of the shredded Gruyère, salt, pepper, spinach, and diced ham until combined.
  5. Roll out thawed puff pastry and cut into 3-inch squares. Place a tablespoon of filling in the center of each square.
  6. Fold the pastry over the filling to create a triangle and press edges firmly to seal.
  7. Beat one large egg, and brush over the tops of each puff for a golden color.
  8. Bake for 20-25 minutes until puffed and golden brown.
  9. Remove from oven and let cool on a wire rack for about 5 minutes before serving.
