Preparation
- Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
- In a large mixing bowl, combine ground beef or chicken, breadcrumbs, egg, finely chopped onion, minced garlic, soy sauce, sesame oil, black pepper, and salt. Mix until just combined.
- Scoop the mixture and roll it into small meatballs, about 1 to 1.5 inches in diameter, aiming for 20-24 meatballs total.
- In a large skillet over medium heat, sear the meatballs for about 2-3 minutes on each side until golden brown.
- Create the glaze by combining honey, soy sauce, ketchup, water, and minced garlic in a saucepan. Heat until it bubbles for 3-5 minutes.
- In the greased baking dish, layer uncooked white rice, scatter diced bell peppers and frozen peas, then drizzle with olive oil or melted butter.
- Pour chicken broth over the rice and vegetables, ensuring it’s evenly covered.
- Nestle in the seared meatballs and pour the honey garlic sauce generously over them.
- Cover the baking dish tightly with foil and bake for 40 minutes, then remove the foil and bake for an additional 10-15 minutes.
- Check that the internal temperature of the meatballs has reached 165°F (74°C) before serving.
