  • 1/4 cup Ketchup Any favorite brand will do.
  • 1/4 cup Water Used for thinning the sauce.
  • 1 tbsp Cornstarch (optional) Acts as a thickener for the sauce.
For the Bake
  • 1 cup Uncooked White Rice Jasmine or basmati rice make delicious substitutes.
  • 2 cups Chicken Broth Vegetable broth is great for a vegetarian option.
  • 2 tbsp Olive Oil or Butter Vegetable oil is a good alternative if preferred.
  • 1 cup Diced Bell Peppers Feel free to swap with any veggie on hand.
  • 1 cup Frozen Peas No need to thaw before mixing in.
For the Garnish
  • 2 tbsp Chopped Green Onions (optional) Enhancing the dish's visual appeal and flavor.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  2. In a large mixing bowl, combine ground beef or chicken, breadcrumbs, egg, finely chopped onion, minced garlic, soy sauce, sesame oil, black pepper, and salt. Mix until just combined.
  3. Scoop the mixture and roll it into small meatballs, about 1 to 1.5 inches in diameter, aiming for 20-24 meatballs total.
  4. In a large skillet over medium heat, sear the meatballs for about 2-3 minutes on each side until golden brown.
  5. Create the glaze by combining honey, soy sauce, ketchup, water, and minced garlic in a saucepan. Heat until it bubbles for 3-5 minutes.
  6. In the greased baking dish, layer uncooked white rice, scatter diced bell peppers and frozen peas, then drizzle with olive oil or melted butter.
  7. Pour chicken broth over the rice and vegetables, ensuring it’s evenly covered.
  8. Nestle in the seared meatballs and pour the honey garlic sauce generously over them.
  9. Cover the baking dish tightly with foil and bake for 40 minutes, then remove the foil and bake for an additional 10-15 minutes.
  10. Check that the internal temperature of the meatballs has reached 165°F (74°C) before serving.
