  • 1/2 cup Chia seeds
  • 1/4 cup Cacao powder

  • 1 teaspoon Vanilla extract
For the Coconut Whipped Cream
  • 1 can Full-fat coconut milk chilled

Step-by-Step Instructions
  1. Prepare the Chia Mousse: In a mixing bowl, blend your choice of milk, chia seeds, cacao powder, maple syrup, and vanilla extract until smooth. Cover and refrigerate for at least 4 hours or overnight.
  2. Make the Coconut Whipped Cream: Chill coconut milk for 24 hours. Scoop out the thick part into a mixing bowl, add sweetener and vanilla, beat until fluffy for about 2-3 minutes.
  3. Bake the Brownies: Preheat oven to 400°F (200°C). Combine brownie mix with coconut oil, water, and eggs, stir gently. Bake for 20-25 minutes. Let cool before cutting into squares.
  4. Layer the Brownie Trifle: In a trifle bowl, layer brownie squares, half the chia mousse, and half the whipped cream, smoothing each layer evenly.
  5. Repeat the Layers: Add another layer of brownie squares, remaining chia mousse, and top with the remaining coconut whipped cream.
  6. Garnish and Chill: Sprinkle chocolate shavings on top, cover, and refrigerate for at least 1 hour before serving.
