Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine graham cracker crumbs, granulated sugar, and melted unsalted butter. Press this mixture into the bottom of a 9-inch springform pan.
  3. Wrap the outside of your springform pan with heavy-duty aluminum foil to create a water bath.
  4. Beat the softened cream cheese until smooth. Gradually add granulated sugar, then blend in sour cream and vanilla extract.
  5. With the mixer on low speed, add the eggs one at a time, mixing until blended in.
  6. Gently fold in the rainbow jimmies with a spatula.
  7. Pour the filling over the crust. Place the springform pan into a larger baking dish filled with water halfway up the sides. Bake for 60-70 minutes.
  8. Cool on a wire rack for about an hour and then refrigerate for at least four hours.
  9. Carefully remove from the springform pan, top with whipped cream and extra rainbow jimmies, and serve.
